Well the GPS device will be all over the place with the instantenious pace - no matter from which manufacturer. But you can off-set that in most devices by looking at either whole exercise avg. pace or avg. pace for the lap. I did some comparison between Polar S3 and G3 and the S3 comes on top if you look for instant pace changes feedback. G3 was better in overall accuracy especially on open roads (no trees, tunels, etc.).
Garmin 405 is nice, but it is not ideal for immediate pace readout (and it will not switch to foot pod unless there is serious issue with receiving the GPS signal). But it offers good compromise by showing lap pace that gives you good indication. If you combine it with auto lap every mile you get a good idea of how you do (you may want to set it to half a mile for shorter races like 5k).
The foot pod will give you almost immediate response to pace changes and it will be fairly accurate if you have calibrated it well for the combination of speed, surface, shoes you run in.
I ran with T6c and 405 just few days ago and the 405 instantenious pace was way off eventhough both agreed on the total distance (with 0.18mi on 7 mile run - hard to say which one is more accurate as the run was mostly in the woods and the 405 was insisting that I'm running 9:30/mi while I was doing more like 7:00/mi which is what the T6c was showing). But again I do not care much about whether I ran 8.00 or 8.15 - the important thing is I ran at specified pace for pre-determine time. And by pace I do not mean that I have to do 7:15 all the time if I do 6:55 for a while and then slow down to 7:20 it is still ok in my book.
As to which of the watches - well any one of them will be good for you if you are a runner. I own all three of them and here is my take:
Polar RS800 (geared to runners)
+ small form factor
+ guided exercise
+ R-R recording you can evaluate in FirstBeat software and get EPOC and TE
+ running cadence and stride length
- it is ugly, but again who am I to judge :-)
- the band is not 100% reliable - mine broke after 8 months of use (replace under warranty), other users report similar issues
- GPS sensor is huge compared to Garmin

+ Garmin Connect + Training Center are fairly good, lots of other sotware and utils on the web like SportTracks
+ automatic sync with the PC - no need for cables and stuff - the watch just connects and transfer data for you
+ foot pod calibration by GPS
+ running cadence with foot pod (no stride length)
- needs to be charged about once a week (or after about 8 hours of exercise) - can be charged from USB port or wall plug
- the watch is pretty thick, not really a daily watch for people with smaller wrist
- no R-R recording, just straight HR
+/- depends on what you like, but some people dislike the touch bezel. I personally like it.

T6c (this is geared to multiple sports including running, triathlon)
+ nice form factor (very comfortable to wear)
+ EPOC and TE built into the watch
+ automatic switch between multiple sensors (well maybe not very important for runners)
+ R-R recording
+ very simple to use and intuitive
- no guided workouts (only warm-up interval, countdown timer, and Int1/2 just like in the S625X that you know)
- the STrM is not the best piece of software I have seen in this market, but combined with FirstBeat Athlete it is very nice HW+SW
- no running cadence (this is what I miss most when I run with T6c compared to the other two watches)
As I said all three are good for runner. Depends on what you train by. I personally never utilized the stide length in RS800.
As for me T6c is my primary HRM, Garmin gets air time when I run in environment that I do not know and will need to find my way back - like running in the woods in Germany while on business trip :-). The RS800 will soon find its way to eBay. It is a runner's watch and I will not use it any longer.
